My first Terra’s Kitchen recipe (of the year)!
I made the Grilled Chicken Thighs with Chesapeake Summer Salad for dinner last night. It was pretty yummy. I wasn’t overly impressed with it, there have definitely been some recipes that I have enjoyed more, but it was decent and did the job of making me full (before I’d even finished my portion).
I found the chicken to be really nice. It was thighs, which is dark meat (my favorite) so it had better flavor and moisture than a breast would. It had 3 an a half thighs in the container, I ate one. The marinade they have for the chicken was okay. I wasn’t thrilled with it. It wasn’t as lemony as I was hoping it would be. I let it marinade for about a half an hour but it just didn’t seem to hold much of the flavor. I definitely would have preferred more lemon.
The salad was okay. My tomatoes were softer than I like them so I tossed them out, not sure if they were overripe or not. I absolutely detest soft/squishy tomatoes or tomatoes that are overripe, so I won’t even taste them to see if the taste is okay once they get to that point. I think the salad would have definitely benefited from tomatoes and I was super sad that I didn’t have any of my own to chuck in there.
The dressing for the salad is the same as the marinade, so same issue, not enough lemon for me. I think I’ll add more to the leftovers before I eat them. The cucumber was also a little bit harsh tasting to me, and the green onion. Normally I love onion, but this onion was super strong and between that and the cucumber it was hard to taste anything properly. Also I felt like the corn was underripe or needed to be grilled up or something, it was very mild tasting as was totally hidden by the other ingredients.
Overall it’s edible and I enjoyed it enough to feel good eating it again but it definitely isn’t a favorite and I’m not sure I’ll be ordering it again. But, as I said, it definitely did the job of filling me up. I ate about half my chicken and about 2/3 of my salad. There’s a ton of food left over for dinner.
I found out that you can actually download and print out the recipes for the foods without ordering the meals so if anything sounds good but you don’t want to order the food via the website you can still use the recipe. The only difference is the marinades they use are made by their company and they don’t list how to make them at home so you’ll have to come up with a substitute of some kind for that.
